I'll be traveling to New Zealand (I live in he US) and would like to use my IPhone 3G there without paying crazy charges. Can I get a SIM card and use it in my 3G?

You can get a pre paid card there just get your phone unlocked. B.t.w. Can you get pre paid cards in the states with AT&T (more to get wifi access-data) access as I looking to head over there in July next year.
