How does one remove an audiobook from my iPhone once I've listened to it?

Just de-select it in your sync settings the next time you sync. Look under the 'books' tab. If for some reason (the way it was imported into iTunes) it's not under 'books' look for it under 'music'.

Just like you would music, movies and TV shows. Delete it from iTunes.
